In order to not make it open up outlook you will need to use some type of server side language. Does your host support php?

I use a PHP contact form on my site that was adapted from a free script on another site. Sadly, that script is no longer on that site. However, there's one here (http://www.sitepoint.com/article/advanced-email-php) that you might find useful. The script that goes along with the article is available for download on the next to the last page of the article. Hopefully, this will be of some use to you.
