I thought about a flash shopping cart once...but ruled it out because its less likely people will buy stuff through a flash interface (or might not have it installed).

I wouldn't rely on flash for e-commerce.

What exactly are you asking for your second question?

Well I would like a link to a tutorial on how you could create something like the section

portfolios/ Kids-outdoors at http://www.footprintsphotography.com/index2.php

The little grid with the photos that when you click on each square a photo loads up in the preview area and main area.

Any direction would be great thx!
