Thank you for your advice. After thoroughly researching multiple payment processing/scheduling systems and receiving feedback from their admin. I am opting to create a custom form that will save the CC info. I am not sure how "secure" this is although I will be employing SSL, but for the size of business it is (about 20 class members / week) I think it is a good solution to start.
The response I received from these system admins was predominately that there is no holding functionality. Not even for a $1 - they would just have to pay that $1 and then at a later date if they no showed for the class, there is no way to bill them for that class.
