I have used Quick.Cart once, and I was able to make some modifications to it. I don't believe it is one of the best carts, but for a free cart it does the job. Any system that you want to modify will require a good investment into learning the system, so make sure there is good documentation with the system.

Also, its a good idea to research what sites are using a system. This can tell you more about the possibilities with the cart system than the website can.

OSCommerce is always a good bet for larger online stores, but if you just need a shopping cart it is probably bulky.

While I haven't used Zen Cart, looking at their site the system provides a respectable list of features. This might be bulky as well, but its easier to disable extra features than to try and add features!
