I've tried _replyTo and _replyToField yet the from address in my inbox is always webforms@mydomain.com, thus making in counter-intuitive when attempting to reply. *Note - mydomain.com is obviously not our domain. I changed it before posting here.

Did you add a _replyTo or _replyToField hidden field in the form?

Yep, I tried that. It seems as if it would pull the field "Email" into the from/replyto address of the inbox?

Check the email header, you should see a line like

Reply-to: user@example.net

If so, the script is working as expected and the problem is with your email client not recognizing that header. You could then check with the vendor to see if there's it's option you can set, or look for a better email client.

I don't see that in the header. I've opened these form results in Outlook, Outlook Express, Eudora and my web-based email application, all of which are not populating the From (or reply-to) field in my email. Instead, the email address that is designated here:

fromAddr = "webforms@mydomain.net"

...keeps appearing.

In addition, I have tried both of the following control fields:

_replyTo
_replyToField

I have reached an absolute impasse. :(

I am having the same problem with ASP FormMail. If I set cdoMessage.ReplyTo to a hard-coded email address, that will show up as the reply-to address. However, once I change the setting to "replyToField" (without the quotation marks) the reply-to address reverts (by default) to fromAddr. When checking message source, I can see reply-to has been left blank.

I have tried any number of configurations, and none of them seem to solve this problem. I have resigned myself to the fact that ASP FormMail cannot set the reply-to address to a form field completed by the visitor when using CDOSYS. Regardless, it's a wonderful script.
