i have a mate who has done one of those, he does however log all emails and has a disclaimer at the bottom.
i'll find out if he'll let me direct u to the page, or if in fact he'll give u the code. he works as a webdesigner so knows what he's talking about.
hope to help more soon

What server-side languages does your server support?

Like markveldhuizen mentioned, this could be abused, so let's keep that in mind when replying and not post anything that could be abused too much ;).
For mailto:s, you can add a to, cc, bcc, add to the subject, etc. Here's a link to a site that might be of interest to you. At least it will tell you some useful facts about mailto:s (could use a mailto: form for the purpose of the joke I suppose, but server side would give you more options):

I know some hosts only let you send mail if the from headers are from your domain. To prevent spam, so you might not be able to do it.
