I have noticed that I have been using this
in my metatags:

<meta http-equiv="Content-Type" content="text/html; charset=UTF-8">

However looking at other peopls websites, I usually this:

<meta http-equiv="Content-Type" content="text/html; charset=iso-8859-1">

This site uses:
<meta http-equiv="Content-Type" content="text/html; charset=ISO-8859-1" />

What are the reasons for choosing one or the other ?

Is one of them somehow "better" ?

utf-8 allow to use non-english chars and symbols, iso-8859-1 is extended ascii. This is the main difference.

Does it matter if one page on my website uses
charset=UTF-8

and another uses charset=iso-8859-1 ?

Any other reasons for chosing one over the other ?

What does iso-8859-1 have
that UTF-8 doesn't ?

any char in iso-8859-1 is a 1 byte char in utf-8. I guess is better to read this:
