Just wanted to hear some opinions.
Edit: Ideally I would like something that is compatible with the languages I listed. Compatible meaning: syntax highlighting, and possible autocompletion/function manual dropdowns.

Aptana Studio (http://www.aptana.com/studio) is pretty good. Its got a really good base of features in the free version, and you can get even more with Pro (starts at $99). Also, I personally find the GUI to be just beautiful, especially on the mac.
TextMate is widely regarded to be the best editor, though when I tried switching, nothing seemed to work for me. (Everything that didn't work for me, however, worked perfectly for my then-coworkers, so I assume that I was the bug instead of it.)
When I first switched to OSX, I started with BBEdit (being the closest to Ultraedit, my first love), but it did not fit in with the OS well at all.
I have been using Subethaedit for the longest time now; it has everything I want/need, and a few extras for kicks. It's also not expensive (I got it for free through MacZOT) and fairly powerful. I'm also known to use vim (though to be honest I'm trying to switch to emacs!).

Thanks for the advice both of you. I think for now I'll try Aptana since it seems to be close to what I'm more familiar to (being an Eclipse plugin after all).
