Hey, I was wondering. Should I change my domain from Wifeee.com to SimmyTimes.com?

Wifeee sounds like an individual name. It's unique and easy to remember in my opinion.

Although simmytimes isn't bad.

But if your telling someone about a website you came across, Simmytimes doesn't have the same ring to it.
