I am running Mandriva 2008 Spring and I'd like to enable VGA mode. On Windows computers I can hear that you press F8 on boot-up. How do you enable VGA mode on Linux?

"VGA Mode" would have to be something added by the distro. You would basically just have to load X with a different configuration file than normal. (Totally do-able, its a command line argument)
What do you need VGA mode for?

I need VGA mode for my games.
On additional boot settings at the GRUB loader, it says something like
vga = 789or some other number, could that be it?

The error I get when running the game is this:
(In a blue box)
VGA MODE NOT SUPPORTED
V: 58.9Hz H: 58.9Hz

That is only for the framebuffer, I assume you are using KDE or Gnome or some other desktop environment? Those run inside X which is completely different than the framebuffer. If you want to make it so you can choose your X graphics mode each time it starts, you would have to disable the automatic starting of X if it is setup that way. To do so you need to disable the xdm service from running at start (assuming they are using xdm, it is a safe bet though).
What game are you trying to run? Is it a native Linux game?
But if the game is causing the video to go out of range of your monitor, it is probably more of an issue with the game than your windowing system.

Does the problem show up right after the game goes full screen?

Yes. I made a log file of the actual game being started. It starts completely normally, so the game must be running, but I just can't display it...

The problem more than likely lies in one of two places: 1) The game's video settings are screwed up or incompatible with your monitor 2) When the game switches to a different resolution, your xorg.conf file isn't properly configured to handle that resolution right.

My computer has never been able to run full screen programs, It's always the same error. Although this game is great and I need to play it :D
