Is there a place that documents all JS events, objects etc? Obviously the people making the browsers must know them all to implement them, so where can I find them? I see a new thing everyday and sometimes I can't even tell it its a custom function or built in to the DOM (surprisingly, a few times it was). Where should I go?

People (and the companies/movements behind them) are quite free what they build into their JavaScript engine. There are some recommendations like

ftp://ftp.ecma.ch/ecma-st/Ecma-262.pdf
but how much of each is implemented and in what fashion you still have to look up in the vendor's references.
