I know it is a very small part of the equation.

Been using a trail version of Fetch on my Mac, but its trial period has expired.

Used to use Smart FTP on the PC, but since I went Mac haven't really settled for one. Noticed a small bug in Smart FTP the other day when using a friends PC, were it gives you the wrong date and time of the file when overwriting files, gives the file you are about to overwrites time and date and vice versa . . .

Anyway, if I am going to buy one for the meager amount they cost, what do people like to use on the Mac?

Transmit (http://www.panic.com/transmit/) is the best OS X FTP app bar none ($30).

If your use of FTP is tied in with your coding, then you might also consider trying out Coda (http://www.panic.com/coda/) ($79), the new coding app from Panic (makers of Transmit).
It has FTP functionality built in and uses the same 'engine' as Transmit.
